A delicious product from the Huangshan (Yellow Mountains) area, home to many of the highly appreciated Chinese teas. The shape of the long leaves resembles the slope of a yellow mountain, and the fine fluff characteristic of white teas covers their surface. The literal wording of the name is "Yellow Mountain Fur Peak". The most perfect Mao Feng is harvested in early spring, before the start of the Qingming festival. Of course, only the youngest leaves are plucked, more precisely the tip and the second leaf from each branch (Orange Pekoe). The infusion is very delicate, tinting the water with a light amber color. The taste is subtle, silky, devoid of tartness, roughness and any smoky or earthy nuances. With such a subdued infusion, the quality of the water is of great importance. To brew Huangshan Mao Feng, we should use spring water - very soft, i.e. with a mineral content below 80 mg per liter. You can buy good-quality water in bottles in many stores and we should not spare any effort to have it when brewing expensive teas. After all, good water is the basis for a perfect brew.
